I love eating at Red Robin (Gourmet Burgers). When I eat there, I always have a Banzai Burger. When we moved from Seattle back to Rochester, NY, we didn’t have access to a Red Robin anymore. I learned how to make a Banzai Burger at home. It’s not as good as the real thing, but it is close.
Now that I am trying to eat low fat, I decided to play. I made a low fat version the Banzai Burger using chicken. It turned out really good!

Ingredients:
1/2 chicken breast
Sesame seed bun
1 Tbsp. reduced fat mayonaise (I used Hellman’s 80% reduced fat mayo)
Shredded lettuce
1 Pineapple Ring
Teriyaki Sauce
2 slices Tomato
Reduced fat cheddar cheese (I used 75% reduced fat sharp)

Directions:
Marinate the chicken breast and pineapple ring in the teriyaki sauce. I used my Foodsaver marinator. Marinate for about half an hour.
Grill the chicken breast until cooked. Shortly before done, cover with cheddar cheese slices and allow to melt.
Grill pineapple ring over medium heat for 15 seconds each side.
Slather mayonaise on both halves of bun. First place the grilled chicken breast (with melted cheese) on the bottom bun. Next place the tomato slices on top of chicken. Lay pineapple ring on top of tomato. Spoon a small amount of teriyaki sauce over pineaple ring. Place a small amount of shredded lettuce on top of pineapple ring. Cover with top of bun, and serve.
