At the local sub shop, they make these delicious Red Osier roast beef sub sandwiches. I have made subs just like them at home using actual Red Osier roast beef bought at the grocery store. And they are really good! But I wanted to make a low fat version of it.

Au Jus Ingredients:

2 beef boulion cubes
2 cups water
1 Tbsp. Worcestershire Sauce
1/2 onion

Au Jus Directions:
Bring water to a boil. Add boulion cubes and stir till they disolve. Reduce heat. Add Worcestershire sauce, and onion. Simmer for 30 minutes. Discard onion.

Sub Ingredients:

Au Jus (from above)
3-4 ounces 97% fat-free roast beef
sub roll
lettuce
3 tomato slices
Hellman’s 80% fat reduced mayonaise

Sub Directions
Spread mayonaise on sub roll. Submerge roast beef in au jus for 10 seconds. Remove, and let excess au jus drip back into pot. Distribute roast beef on sub roll. Cover roast beef with tomato slices, and lettuce. Serve with cup of au jus for dipping.
