I have been trying to come up with some ways to eat canned tuna, keep it low fat, and make it palatable. The tuna & cottage cheese sandwich kind of sucked! The tuna and salsa was edible, but not much more.
Tonight I came up with an idea that was pretty good. I had the idea of making a pulled pork barbque sandwich but with tuna instead of pork.
We have a local BBQ place called Dinosaur Bar-B-Que. And they make these awesome pulled pork BBQ sandwiches. So I bought a bottle of their barbeque sauce of the grocery store. I have a Dinosaur Bar-B-Que restaurant cook book, so I looked to see how they were prepared. I was mosly interested in at what point they add the sauce. They add it after the prok is cooked.
So what I did was spray a non-stick skillet with cooking spray, then heated the drained tuna over medium heat. When the tuna was warm, I put the tuna into a bowl. I added three tablespoons of Dinosaur BBQ sauce, and stirred it in. Then I ate it on sandwich bread. It was actually pretty good. I made a second sandwich, and added a little more BBQ sauce over the top, and it was also pretty good. I will probably make this again.
The tuna only has a tiny bit of fat. About 1.5 grams per can. But tuna also has about 32 grams of protein! The Dinosaur BBQ sauce has no fat. It is all carbs. But the 3 tablespoons of BBQ sauce is only about 37 calories.
