I love good garlic mashed potatoes. But generally they are pretty fat heavy. So I have been playing with my garlic mashed potatoes recipe trying to make it low fat. I just about have it. Here is what I have. I will probably tweak it some more.

Ingredients:
1 lb potatoes
2-3 cloves of garlic
3/4 cup not-fat milk
1/2 tsp. salt
1/8 tsp. black pepper
cooking spray

Directions:
Wash potatoes. Slice unpeeled potatoes into approximately 1 inch cubes. In a large pot, cover potatoes with cold water. Heat on high until water begins to boil. Lower heat to medium and continue to cook for 15 minutes.

Spray non-stick sauce pan with olive oil, and heat over medium heat. Finely chop garlic cloves. Saute garlic in sauce pan for 2 minutes stirring constantly to prevent burning. Add milk and cook for about 8 minutes, stirring often to prevent burning. Add salt and pepper to milk mixture.

When potatoes are done, drain off water, and then mash with masher. Add wilk and garlic mixture to potatoes, and mix well. Serve. Sprinkle with Molly McButter for butter taste.

Yield: 2 large servings, or 4 small servings
Note: recipe can easily be doubled.
