Tonight, my wife made these great low fat chimichangas. I love chimichangas! They are my favorite mexican food! Whenever I manage to get to an El Toritos restaurant, I will order theri Outrageous Chimichanga. It’s not on the menu anymore, but they will make. A chimichanga is basically a fried burrito. But here is a low fat version.
Skinny chimichangas
Ingredients:
1/2 pound ground skinless turkey breast
1 finely chopped onion
1 minced garlic clove
2 tsp chili powder
1 tsp oregano
1/2 tsp ground cumin
1 (8-ounce) can tomato sauce
2 TBSP chopped mild green chiles
1/3 cup shredded reduced-fat cheddar cheese
4 (8-inch) fat-free flour tortillas
Directions:
Preheat the oven to 400 degrees.
In a sprayed medium nonstick over medium-high heat, add turkey, onion, garlic, chili powder, oregano and cumin. Cook until browned (about 6 minutes), breaking up turkey with a wooden spoon. Mix in tomato sauce and chiles. Heat to boiling, then reduce heat and simmer for about 5 minutes, or until sauce thickens. Remove from heat. Stir in cheese.
Wrap tortillas in foil and warm in oven for 10 minutes.
Spoon in 1/2 cup of filling into center of each tortilla. Fold in sides. Roll to enclose filling. Place chimichangas, seam-side down, on a sprayed nonstick baking sheet.
Lightly spray tops of tortillas with nonstick spray. Bake until golden and crisp, about 20 minutes. Do not turn.
