At the local sub shop, they make these delicious Red Osier roast beef sub sandwiches. I have made subs just like them at home using actual Red Osier roast beef bought at the grocery store. And they are really good! But I wanted to make a low fat version of it.
Au Jus Ingredients:
2 beef boulion cubes
2 cups water
1 Tbsp. Worcestershire Sauce
1/2 onion
Au Jus Directions:
Bring water to a boil. Add boulion cubes and stir till they disolve. Reduce heat. Add Worcestershire sauce, and onion. Simmer for 30 minutes. Discard onion.
Sub Ingredients:
Au Jus (from above)
3-4 ounces 97% fat-free roast beef
sub roll
lettuce
3 tomato slices
Hellman’s 80% fat reduced mayonaise
Sub Directions
Spread mayonaise on sub roll. Submerge roast beef in au jus for 10 seconds. Remove, and let excess au jus drip back into pot. Distribute roast beef on sub roll. Cover roast beef with tomato slices, and lettuce. Serve with cup of au jus for dipping.

I love eating at Red Robin (Gourmet Burgers). When I eat there, I always have a Banzai Burger. When we moved from Seattle back to Rochester, NY, we didn’t have access to a Red Robin anymore. I learned how to make a Banzai Burger at home. It’s not as good as the real thing, but it is close.
Now that I am trying to eat low fat, I decided to play. I made a low fat version the Banzai Burger using chicken. It turned out really good!
Ingredients:
1/2 chicken breast
Sesame seed bun
1 Tbsp. reduced fat mayonaise (I used Hellman’s 80% reduced fat mayo)
Shredded lettuce
1 Pineapple Ring
Teriyaki Sauce
2 slices Tomato
Reduced fat cheddar cheese (I used 75% reduced fat sharp)
Directions:
Marinate the chicken breast and pineapple ring in the teriyaki sauce. I used my Foodsaver marinator. Marinate for about half an hour.
Grill the chicken breast until cooked. Shortly before done, cover with cheddar cheese slices and allow to melt.
Grill pineapple ring over medium heat for 15 seconds each side.
Slather mayonaise on both halves of bun. First place the grilled chicken breast (with melted cheese) on the bottom bun. Next place the tomato slices on top of chicken. Lay pineapple ring on top of tomato. Spoon a small amount of teriyaki sauce over pineaple ring. Place a small amount of shredded lettuce on top of pineapple ring. Cover with top of bun, and serve.

I love garlic bread. It goes perfect with things like pasta, or fancier meals like prime rib. When I used to make it, I would spread on softened butter or margerine. Or if the butter wasn’t softened enough, I would melt it in the microwave, and then brush it on.
But these days I am trying cut my fat intake, so I have been doing something different.
Ingredients:
1/2 loaf Italian bread
Olivio buttery spray
Johnny’s Great Caesar Garlic Seasoning
Directions:
Preheat oven to 400 degrees. Slice the italian bread into two thinner slabs. Spray the inside part of the bread with the Olivio buttery spray (about 5-8 sprays each piece of bread). Sprinkle the buttered bread with the Johnny’s. Place the two pieces of bread back together as they were before being sliced. Wrap with foil. Bake in oven for 10 minutes.
The oven temerp can be a little higher or lower if something else if alread cooking in there. Just adjust the time a little.
A good friend of mine told me how she was having these low fat steak fries for dinner. Since then I have been wanting to make some low fat french fries too. So today I had been looking around for various oven baked french fry recipes. I found that many of them were similar.
Ingredients:
1 or more russet potatoes
Lawry’s Seasoned Salt (my preference)
or
Nature’s Seasons Seasoning Blend
Directions:
Preheat oven to 500 degrees. Cover a cookie sheet with parchment and spray with light coat of cooking spray.
Scrub potatoes with vegetable brush and cold water. Slice potatoes into 1/4″ strips (like french fries). Place french fries into large bowl, and sprinkle heavily with seasoning. Shake the bowl around to get fries well covered with seasoning. Place fries on cookie sheet. Spray them lightly with cooking spray. Bake for 10 minutes. Turn fries over (you may need to scrape them off of parchment), and bake for another 10 minutes.
Serve.
I made a couple omelettes this morning for breakfast. I love a good omelette. They are fun to make, and delicious to eat. But a regular omelette would not be very low fat considering the eggs, cheese, and the butter they cook it in. So I decided to try to make a low fat omelette. Instead of butter, I used olive oil cooking spray. I used 97% fat-free ham. Instead of eggs, I used fat-free egg substitute. I used 75% reduced fat cheddar cheese. The overall result was pretty good. I might play with it a little next time. Maybe using some buttery spray, or Molly McButter to add a little buttery taste.
Ingredients:
Cooking spray (butter flavored olive oil is good)
3/4 fat-free egg substitute such as Egg Beaters
1/3 cup shredded reduced fat or fat-free cheddar cheese
Optionals:
Just dice up any of the following, totalling up to about a 1/2 a cup:
Ham, green pepper, mushrooms, bacon, sausage, onion, broccoli, tomato, olives, etc, etc
Be creative.
Directions:
Spray small nonstick skillet with cooking spray and heat over medium-low heat. Add optional ingredients (mushrooms, ham, green peppers, etc), and sauté for about 2-3 minutes. When the stuff is done sauteeing, gently pour the egg substitute over the optionals. Give a quick stir so that optional ingredients are mixed evenly into egg, and didn’t just get pushed to edge of the pan when you poured mixture in. Cover the pan. Check every couple of minutes or so to see if the top of the egg is cooked. Spread some of the shredded cheese along the centerline of the omelette. Give the cheese a short time to start melting, then remove skillet from heat. Let the omelette slide partially out of skillet onto a plate, then folding it over.
