Well, I am not eating the healthiest today. I start out good. I ate a banana when I got up. When I got to work, I ate a Healthy Choice supreme pizza. I was eating healthy, and low fat up to that point.
But then came lunch. I met a friend for lunch. We did couple errands, and then went over to Burger King. It was my buddy’s turn to buy lunch, so he ordered his food, a King Sized meal. Then it was my turn to order. I really wanted a Whopper With Cheese, but I was good, and ordered a Chicken Tendergrill sandwich and a large Diet Coke. When she asked if I wanted a bacon, or cheese, I told her no. So far so good. But the order came, and we made our way tot he table. There were two large sized cups, and two orders of fries. He went up to inquire. In stead of king sizing his meal, she made his meal a large, and gave me a large meal too. So I ate my sandwich, and drank my Diet Coke, and ate the french fries that I really didn’t need.
Then when got back to work, I found leftover food out on a table in the atrium. I grabbed 4 chicken wings, and a little too large slice of cake. I knew that I shouldn’t be grabbing the stuff as I was grabbing it. I even felt guilty for taking it. But I took it and ate it anyway.
Well, hopefully I got that out of the way. I still have a couple of Healthy Choice entrees in the freezer. I will eat one before I leave work to go to aikido class tonight. And then we are having leftover low fat veggie lasagne for dinner at home.
I have a doctor’s appointment next Monday, and I want to go in weighing way less than my last visit to see if he says anything. ![]()
I have eaten a lot of fruit today. Way more than I usually ever eat. I ate a couple bananas for breakfast, and some grapes. And throughout the day, I have 2-3 pounds of grapes, about 3-4 bananas, and 3-4 oranges. I hardly ate any “real” food. I had a little bit of leftover chili for lunch. And my wife made a low fat veggie lasagne for dinner. I had couple pieces of that. I am still hungry. Maybe I’ll make a peanut butter and jelly sandwich.
I weighed 171.2 this morning, but I have no clue what I am going to weight tomorrow morning. Yeah I ate two plus pounds of grapes, but they are mostly water. The oranges have a lot of water in them too.
Then I ran 7 miles on the treadmill burning up over 800 calories. Then I did an aikido class this morning. So who knows.
Maybe I’ll make a tuna sandwich with reduced calorie mayonaise.
My wife couldn’t decide what she wanted for dinner. So I suggested fish. She said we hadn’t had fish in a while and that could be good. Great! So I took dinner plans into my own hands.
First I stopped at the warehouse store, and bought a large chunk of farm raised salmon. Great price at $5.49/pound. I planned on cooking using half of the salmon for dinner, and vacuum seal the other half with the FoodSaver, and freeze. I also bought a 4 pound carton of grapes. The grapes aren’t for dinner, just for snacking.
My next stop was the grocery store. I bought some fresh Broccoli, and some sliced mushrooms. I also wanted to try some sprays for low fat cooking. I bought some extra virgin olive oil spray, and some Olivio Buttery Spray. I also bought a loaf of italian bread.
When I got home, I turned on the oven to preheat to 400 degrees. I pulled out a glass baking pan. I cut off half the salmon, and put it into the dish. I did a couple sprays of the Olivio Buttery Spray, and then drizzled some lemon juice over it. The Olivio Buttery Spray is going to be a lot lower fat than drizzling melted butter over the salmon. I put the salmon into the oven to bake for 30 minutes.
I cut off half of the loaf of italian bread. I sliced it in half. Again I used the Olivio Buttery Spray. I sprayed a little on the inside of each half, and sprinkled some Johnny’s Great Caesar Garlic Spread & Seasoning on to the bread. I wrapped the bread in foil, and set it aside.
I put a little water into a pan with a vegetable steamer.
When the salmon had about 10 minutes left to cook, I put the bread into the oven with the salmon. I cut some of the broccoli off the crowns into the steamer, and turned that burner onto high. I put a skillet on another burner, and sprayed a little bit of the extra virgin olive oil in the bottom. I filled the pan with the sliced mushrooms, and sauteed them.
When the timer went off for the salmon, dinner was done. It was delicious! The Olivio Buttery Spray worked great on both the salmon and the Garlic bread. The sprayed olive oil worked great for sauteeing the mushrooms. And using the sprayed versions allowed me to use much less. Low fat does not need to be low taste!! Dinner was great!

The day started off healthy enough. A banana to begin the day. I came to work with a bag of Healthy Choice entrees to stick in the freezer. I take a Pepperoni French Bread Pizza with me on my way to my desk, with plans of taking it to the microwave. Then I see it. Signs above my cube neighbors desk. It’s his birthday, and his desk is covered with goodies. Oh god, this might be a rough day. I take the French Bread Pizza, and and cook it in the microwave. It was okay. I wrote a review of it for the blog.
Then I go over and wish him a happy birthday. I scan his desk for something remotely healy to eat. There are bagels, but you gotta have cream cheese witha bagel to do it right, so I pass. But I did take a small bite sized Snickers bar thing. Okay…not bad.
But then a little while later, I was passing his desk. My hand reached out, snatched up a small brownie, and I ate it. It was good! So I had another small one. Okay, enough. But I am eyeing the bag of cheese flavored Gold Fish crackers that he has on his desk.
Okay lunch time. I went off to the library to meet with a friend, and check out the used book sale for some low fat cook books. SCORE! I bought five different cook books! Back to work.
I went to the freezer to pull out another Healthy Choice entree…I think I have a roasted turkey one, and a four cheese manacotti one. But something catches my eye. More free food, and I automatically bee-line for it. There are some wraps, potato chips, a cookie, and some pasta salad. Apparently left over from a lunch time meeting. The wraps look like tuna salad, and one that I think was a chicken wrap. I grabbed the chicken wrap. There were no plates, so I grabbed a napkin, and piled some of the pasta salad onto it. I skipped the bags of Lays potato chips, and the peanut butter cookie. I went back to my desk. The wrap seemed healthy enough with chicken, tomato, lettuce, onion, and who knows what else. It was good. The pasta salad was good also. Okay, I’ll skip the Healthy Choice entree, since I have already eaten.
But then I hear them next door at the birthday cube discussing this chocolate cake. I heard them say it was Ultimate Chocolate Cake. Oh god, I have had that before, and it is so good. Next thing I know, I am over there getting a slice…a small slice of the Ultimate Chocolate Cake. It was good!
Okay, nows it 2:10pm, and the work day is over half over. I think once I make it home, I will be doing okay. My wife will be making something healthy for dinner. And I can snack on bananas, oranges, and other low fat stuff.
I guess eating a little not-so-healthy stuff is okay once in a while. The thing is moderation!!!! I don’t eat like this everyday, and I don’t gorge myself on the stuff when I do eat it. Anyway, like I said in another post, my weight was down to it’s lowest point in almsot 4 years this morning. I really don’t want to lose much more weight. Actually I wouldn’t mind weighing a little more, but of lean muscle.
These are one of my favorite easy to fix, but healthy foods! We have Jenn-Air grill installed in our kitchen so we are able to grill year round. I’ll buy fresh boneless skinless chicken breasts at the grocery store. Then maybe for lunch or dinner, I’ll pull out one of the breasts and place it on the grill on high. After the one side is cooked pretty well, I’ll flip it over, and start grilling the other side.
As this is cooking, I’ll put out the bread. I’ll spread a thin coat of mayonaise. When I wanted REALLY low fat, I used fat-free Miracle Whip. But it doesn’t taste as good. I’ll have to try Hellman’s reduced fat mayonaise, and see how it tastes on a chicken sandwich. Then I’ll place a leaf of lettuce on the mayo. Either Iceberg lettuce, or Romaine lettuce will work. Then next comes a slice of tomato. I like beefsteak, because they are big, and a slice will cover most of the sandwich.
Now as the other side of the chicken seems to be done grilling, I’ll put the chicken off the grill, and slice down the middle into two thinner slabs of chicken. If the middle isn’t fully cooked, I’ll place then back onto the grill.
When these are fully cooked, I’ll slice each of these into two thinner slabs. I will use two of these thin chicken slabs for each sandwich. So one chicken breast will yield two sandwiches.
There is nothing like a warm freshly made grilled chicken sandwich! Yummy!
