Often, making a multiple batch of a recipe is not much more work than making a single batch. There are certain things that are easier to make in big batches than others. Whenever I make my low fat chili, I make a huge batch of it, pour it into tupperware containers, and freeze them. It doesn’t take that much more work to do it. Then we will have a bunch of chili in the freezer ready to pull out and heat up when we don’t feel like cooking.
This last weekend, I made a 6x batch of low-fat meatloaf. I mixed the stuff in a big salad bowl, divided it among 6 loaf pans, and baked them. We ate one for dinner, and we froze the other 5. That was on Saturday.
On Sunday, I made three low-fat lasagnas! Now this took longer. It took a while to get the big pot of water to boil so I cook the noodles. And it took forever to get that much lean ground beef to brown! But I baked the lasagnas, and then we divided them, and froze them
Our FoodSaver allows us to vacuum pack our food in the freezer. This is really cool beause we can have the food in the freezer much longer without worrying about freezer-burn. It would suck to make batches, store them in the freezer, only to have to throw them away later!

Who knew! A good friend of mine mentioned that she tried some fat free ice cream. I didn’t even know it was possible. Isn’t the primary ingredient of ice cream, cream? Isn’t that like almost pure fat? Whatever. But Breyers make a fat free ice cream. Last night I was in the mood for the ice cream, so I decided to pick up a quart of the stuff. I only saw Vanilla, but I was in a hurry. SO they may or may not have other flavors. The carton said it was double churned so it would be creamy. And it was very creamy. It tasted pretty good too. WOuld I pick this over regular ice cream in a blind taste test? I doubt it. But nonetheless it was good. I have to check the box, but I am guessing there is still a ton of sugar in it. But at least it has no fat. So small amounts of it as dessert wont kill me. Both my wife and I had a single scoop each. That was our dessert for our meal which consisted of fat free hot dogs! Yummy! Sounds real healthy huh? Well, I taugh a class and didn’t get home until about 9, and my wife worked, and didn’t get home until close to 10. So I wasn’t about to be cooking a full blown meal!

I had a health screening at my work today. It was free. They have them once or twice a year.
First, I couldn’t eat or drink anything except water for the prior 8-12 hours. So I haven’t had enything to eat since last night. And no Diet Pepsi when I got up this morning.
They weighed me at 172 pounds (with clothes, but no shoes). The woman measured my wasit at 29 inches! Wow!!! I shrunk!
Then she took my blood pressure at 106/64. That seems really low. I take medicine for my high blood pressure. Even so, it often is still on the high side of normal. SO I am not sure about those numbers. Maybe it is because I hadn’t had any caffeine this morning?
Anyway, she took some blood which will be sent off to a lab somewhere, and they will mail me the results, along with a copy to my doctor. I am interest in what my cholesterol will be. It has always been pretty low.
But I have definately gotten thinner! It’s eating all the low fat foods!
