I like potato salad once in a while. But it is not really low fat. I decided to try and make a low fat version of it. It turned out pretty good. Next time, I may try to use 80% reduced fat Mayonnaise instead of the Fat Free Miracle Whip.

Ingredients:
2 pounds potatoes
1 1/2 cups Fat Free Miracle Whip
1 tbsp vinegar
1 tbsp yellow mustard
1 tsp salt
1/2 tsp pepper
1 cup chopped celery
1/2 cup chopped onion
6 hard boiled eggs

Directions:
Scrub the potatoes with a vegetable brush, under cold water. Cut into cubes. Bring a large pot of water to boiling. Add potato cubes, cover, and reduce heat. Cook for 20 minutes.
When potatoes are done cooking, drain water, and rinse on cold water to cool them down.
Remove shells from hard boiled eggs, cut in half, remove and discard yokes. Chop egg whites.
In a large bowl, mix Miracle Whip, vinegar, mustard, salt and pepper. Add potatoes, celery, onion, and chopped egg whites. Toss well.
Refridgerate for at least four hours and serve.

My wife has done the Weight Watchers program several times. It has always worked for her while she was doing it. Previously she has done it and lost weight, but then work would interfere with her ability to make it to meetings. She would stop going, her eating habits would get bad, and she would gain weight.
Recent she left the job that she had been doing for years, and that forced her to work 60 hours a week. Now with time on her hands, I talked her into going back to Weight Watchers. At her meeting today, she weighed in, and had lost 4 pounds since the previous week! I am proud of her. I have been cooking/eating low fat, so I am sure this has helped.
The meetings offer different things for different people. My wife mostly goes for the weigh-ins. So she pays $12/week to go use their scale. Heck, we have a scale at home. But weighing in front of other people helps her keep her goals. So if that’s what it takes, then hey, thats what it takes! I want her to be healthy!
Personally, a program like Weight Watchers wouldn’t be right for me. I don’t need it. I just decide to eat healthy, and lose weight, and I do it. But for other people, they need a program like Weight Watchers, Jenny Craig, or Slim Fast or whatever.
My wife said she likes Weight Watchers since you can eat regular food. You don’t have to buy special meals from the company like with Jenny Craig. Hey, I like to cook, and I am pretty good at it.
Anyway, the Weight Watchers program is working for my wife. She is a doing a great job!
