I am starting to run out of the Healthy Choice entrees that we bought on sale. I am out of the french bread pizzas. I need to go back and get more using the rain check.
Today I had the Healthy Choice Four Cheese Manicotti (ricotta, mozzarella, parmesan, & romano cheese filled pasta in marinara sauce) comes with broccoli for the vegetable. It has 270 calories, with 4.5 grams of fat, and 450mg of sodium. Almost 17% of the calories come from fat. It counts for 5 Weight Watchers points.
It took 5 minutes of microwave time, and had to be stirred once in the middle. The box says let stand for 2 minutes, but you probably want to let it sit for a little longer as the cheese in these things gets really hot!
The four cheese manacotti’s are very good, and the marinara sauce is pretty good too. The broccoli is well…broccoli. If you like steamed broccoli, it’s okay. I generally with sprinkle a little Molly McButter on the Healthy Choice vegetables.
The Healthy Choice Four Cheese Manicotti is one of my favorites of theirs. Would I wna to eat if all of the time? No. But I enjoy it every once in a while.

Last night I was participating in a karate demo, and was going to do a 5 board power break. I mentioned to my teacher about how I lost weight, and it will be important get my for right as I wouldn’t have as much weight behind it. She paused and looked at me seriously seriously, and said she had been wanting to talk to me about that. She told me she didn’t want me losing anymore weight. I think it was kind of funny. Actually my weight is down from mid 180’s to mid to low 170’s. So it’s not like I have actually lost ahug amount of weight. But what I have lost has been largely fat. So I am much thinner. I went from a 34 inch waist to a 32 inch waist, and maybe just a little less than that. I am much leaner. I am getting to the point that if I went on a cruise, I might actually not be afraid to wear speedos! :)
I would love to keep myweight where it is, or even gain a little weight, but still be leaner than what I am. I think by eating low fat healthy food, and getting aerobic fat-burning exercise I will get to where I want to be.

Five board break

I went to the library today for lunch, and as alwasy I scanned the used book sale for books I might be interested in. These days I usually go to the cookbook shelf first to scan for low fat cook boks, or diet type cookbooks. I had just been theere on Friday, and bought a few of them. I wasn’t expecting any new ones to be there. But I lucked out and found a cool looking cook book titled Cooking Light-5 Ingredient 15 Minute Cookbook! It only cost me $2.
The cookbook has great color pictures showing many of the dishes. And the recipes use a lot of common ingredients. Hopefully the stuff tastes good. It’s broken down into categories of Fish & Shellfish, Meatless Main Dishes, Meats, Poultry, Sandwiches, Slow Cooker Suppers, and Mix & Match Recipes.
According to the introduction all the recipes take 15 minutes or less of active work. And the recipes only require 5-10 ingredients, not counting things like salt, pepper, water, and cooking spray.
It will be fun to try a few of these recipes.

This is a low fat or at least reduced fat version of the lasagna that my mom used to make when I was a kid.

Ingredients:
1 1/2 lbs 95% lean ground beef
1 cup onion (chopped)
2 large cloves garlic chopped or 1/4 tsp garlic powder
2 tsp oregano
2 cans condensed tomato soup
1/4 cup water
2 tsp vinegar
12 lasgana noodles
1 pint fat free cottage cheese
1/2 lb reduced fat mozerella cheese, thinly sliced
reduced fat, or fat free grated parmesan

Directions:
Brown meat and onion and garlic over medium heat. Add soup, water, oregano & vinegar. Simmer for 30 minutes.
Bring a large pot of water to boiling. Add noodles, and cook for 10 minutes. Pour into collander, and spray with cold water to cool.
Preheat oven to 350 degrees.
Assemble lasagna by making three layers alternately with noodles, cottage cheese, meat sauce, and sliced mozzarella cheese (using 1/3 of each ingredient per layer). Sprinkle parmesan cheese over the top.
Bake in oven for 30 min. Let stand 15 minutes before serving.

Notes: If you like mushrooms, you can add a carton of sliced mushrooms in when browning the ground beef, onions, and garlic. If you like garlic, you can always add more garlic.

Well, I am not eating the healthiest today. I start out good. I ate a banana when I got up. When I got to work, I ate a Healthy Choice supreme pizza. I was eating healthy, and low fat up to that point.
But then came lunch. I met a friend for lunch. We did couple errands, and then went over to Burger King. It was my buddy’s turn to buy lunch, so he ordered his food, a King Sized meal. Then it was my turn to order. I really wanted a Whopper With Cheese, but I was good, and ordered a Chicken Tendergrill sandwich and a large Diet Coke. When she asked if I wanted a bacon, or cheese, I told her no. So far so good. But the order came, and we made our way tot he table. There were two large sized cups, and two orders of fries. He went up to inquire. In stead of king sizing his meal, she made his meal a large, and gave me a large meal too. So I ate my sandwich, and drank my Diet Coke, and ate the french fries that I really didn’t need.
Then when got back to work, I found leftover food out on a table in the atrium. I grabbed 4 chicken wings, and a little too large slice of cake. I knew that I shouldn’t be grabbing the stuff as I was grabbing it. I even felt guilty for taking it. But I took it and ate it anyway.
Well, hopefully I got that out of the way. I still have a couple of Healthy Choice entrees in the freezer. I will eat one before I leave work to go to aikido class tonight. And then we are having leftover low fat veggie lasagne for dinner at home.
I have a doctor’s appointment next Monday, and I want to go in weighing way less than my last visit to see if he says anything. :)
